Blueberry Puff Pancakes

2 eggs ¾ tsp. baking soda

1 C. Buttermilk ¼ C. oil

2 1/3 C. biscuit mix 1 C. blueberries

¼ C. sugar

Beat eggs until thick and light. Blend in buttermilk. Add to eggs and mix in the dry ingredients. Stir little.

Stir in oil, fold in blueberries.

Make very light and fluffy pancakes.
